Gotta love that Goulash!



Yummy, Yummy goulash! Such a great and inexpensive thing to make for the whole family! I make it a little different then most. 

I have a boyfriend who loves like the poor man food, you know the food that had originally come to being because it was inexpensive and easy to make with what you've got in your cupboard. Well this is one of his many favorites that he always asks me to make, beside spaghetti, or stroganoff.

 

I like to use things that I do have on hand and I need to get rid of, so here I have a few green onions, a regular yellow onion and a few mushrooms cut into smaller pieces, you can also add potatoes to the party too but I was out I would say you would most likely only need one and cut it into little cubes. You can also added a bunch of other veggies if you want but these are the ones I'm usually using.


I usually put every thing in a big pot because of the amount I make, You will need about 1lb of ground beef, You can also use cubed steak cut into pieces, chicken, whatever you want really, again its a really great thing to make when you have things you need to get rid of. I cook the ground beef with a couple of tablespoons of minced garlic and a good amount of seasoned salt and pepper. Usually you want to use the seasoned salt but if you don't like or want garlic in it that's fine, whatever you feel will make your ground beef taste great.


I also use an infused oil I made its a rosemary and thyme with chive infused oil, I have an earlier post on how to make it if your interested. but I put very little spices in to the goulash, I through my veggies in with the ground beef when its got a little bit of brown on it. 


After the ground beef is fully browned I do actually drain the fat out of it, you can do that before you add the veggies if you want but I really want my ground beef to get some of the veggie flavors in during the browning process so that it can take on a little bit of those flavors. After draining I will usually add a bit more seasoned salt and pepper to the mix.



I blend 2 cans of stewed tomatoes until it turns into a tomato sauce, and I add 2 cans of diced tomatoes, you can definitely use fresh tomatoes if you have it, I didn't so I made do with canned, you can also use canned tomato sauce and a couple cans of diced if you don't have stewed tomatoes again this dish is all about when you got on hand so if you don't have something, replace it with what you got, I also threw in 2 bay leaves, a pinch of more seasoned salt and pepper. (when you add all the liquid to the beef and veggies some one the flavor gets lost in the mix, that's why usually you have to add just a bit more to get that flavor back.)


I love egg noodles so I always have them around, many goulash recipes call for elbow macaroni but I just never have it, I'm sure you can sub whatever noodle you have on hand, and in my case I had egg noodles, boil those suckers while you have the veggies in the ground beef as your still browning it that way when you get the sort of sauce/stew done the noodles should be done shortly after.


After everything is really kind of done cooking I add the noodles to the sauce, and let that cook on low for a few more minutes to really let the noodles kind of cook in that sauce and get some of that flavor.

After that you can either serve it right out of the pot piping hot or let it sit for a few minutes to let it cool just a little bit. I have to let it sit because my boyfriend will burn his mouth, he doesn't wait he just eats what is put in front of him, hot or not.

Goulash Recipe

1LB Ground beef (or about a pound of any other meat you's like to use or have on hand)
1/2 a Package of Egg Noodles (or about 1/2 box of elbow macaroni) 
3-4 Green onions (optional, if you only have yellow/reg onions that's fine too)
1-2 Yellow onions
1 Package Mushrooms (any kind you like or have is fine)
2 Cans diced Tomatoes
2 Cans stewed Tomatoes pureed (or 1 can of tomato sauce)
3-4 Tablespoons seasoned salt
1 Teaspoon pepper
2-3 Tablespoons Minced Garlic
2 Bay leaves 

Directions: On medium high heat brown ground beef with 2-3 tablespoon garlic a tablespoon seasoned salt, and pinch of pepper, until mostly brown. Then add the veggies and cook until meat is totally browned, start the noodles in boiling water, drain the meat and return to the heat, turn it down to medium heat, add another tablespoon of seasoned salt and another pinch of pepper. Add diced tomatoes and pureed stewed tomatoes or tomato sauce, add a bit more pepper and salt if you wish/to taste, and the 2 bay leaves. Allow the sauce to simmer while noodles are cooking, once the noodles are done, drain and add to sauce and allow to cook for another 10-20 minutes. Serve piping hot or allow to sit and cool for about 10 minutes and then serve.
