New take on a classic, French Toast Rolls

Love these! They are an easy way to make stuffed french toast! They can be made in advance and brought out when your in a bind and need to make something fun for breakfast/brunch! Here's My super easy recipe, I'm sure you will have all the ingredients on hand :)

I LOVE french toast! who ever invented them was a genius! I've known how to make french toast since I was a kid, It was one of the first things my mother taught me in our little house on the weekends. I loved watching her cook and asking her a billion questions while she did, I drove her crazy (much like any normal kid :P) So when I started seeing pictures of these french roll ups I had to try my hand at them. This is the recipe I came up with :)


I would suggest getting a couple of loafs of bread, This recipe will knock out have a loaf so if your family is a bunch of bread eaters your going to want to make sure you have enough bread to make this and some left over so you don't have to go out and buy more bread. I suggest getting bread when its on sale and then planning on making these, If you want get a bunch of bread and make these suckers in bulk that way you can have some ready when everyone in the house is screaming for more lol. For this recipe your going to need about 8 slices. I cook for two and that is the perfect amount for two people, you will each get four. You will also need some sort of flattening device, I have a rolling pin , but you can most likely flatten it out with your hands or even a cup, if you don't have a rolling pin. I also used a pizza cutter for fast and easy crust removal, You can use a regular knife if you don't have a pizza cutter, and you will need a cutting board so that you aren't leaving scratches in whatever surface your working on.



I cut the crust off the bread first and then roll it out, if you want to roll it out and then cut the crust off thats ok too, it really doesn't matter what order you go in for this part. SO I cut the crusts off first,


And then I rolled it out as flat as I could, it doesn't really look very flat in this picture I know but I did indeed flatten it lol.


Now for this next part your going to need a few things. To make the coating mixture you will need to mix two eggs with a shot of milk, which would be something like a 1/4 cup, about 1/2 a teaspoon of cinnamon, and two teaspoons of sugar, then stir up that mixture really well. Set that aside for now, Soften some cream cheese in a dish in your microwave, put it in for about 20 seconds, stir it up after it comes out to even out the heat. Spread a little bit of the cream cheese on one whole side of the piece of flattened bread. Then spread on a flavor of sweet filling on half of that same piece of flattened bread, I used a strawberry preservative, you can choose whatever fruity filling you'd like, or if your a big fan of nutella that would also be something to use if you like. Roll up the flattened piece of bread starting on the side you put your sweet filling on, the cream cheese at the other end should help to keep the whole thing held together kind of like a food glue if you will. 



Once you've done that to all your pieces of bread your now ready to roll those roll ups in your egg mixture, I rolled them through the mixture and then put them on a paper plate until the pan was ready for them. Your going to want to  heat a frying pan or skillet on medium low heat, and melt about 2 tablespoons of butter in it, you can wait until that is ready and then roll your french rolls in the edd mixture and then place them in hot the pan. Or you can do like I did where I rolled them then put them on a paper plate and then got the pan ready. I like doing it that way because its gives the rolls a little time to really soak up that egg mixture, but you can do it which ever way you want.


I had a smaller frying pan so I could only fit four at a time in there, if you have a bigger one and your able to fit more then thats great, just be careful about over crowding, you want to give the rolls a little space from each other because they will stick together given the chance to do so. Fry them on each side until golden brown, then remove from heat, allow them to cool for 2-3 minutes before serving them because the filling inside will be hot, you don't want to burn anyone's mouths. You can serve them with or without powdered sugar, and with or with out syrup, the sweetened filling gives it just enough sweetness for us so we just ate them as is.

French Toast Roll Ups

8 slices of bread
1/4 cup milk
2 eggs
1 teaspoon Cinnamon
2 teaspoons Sugar
2 tablespoons Butter - melted
4 oz Cream Cheese - Softened
Sweet filling of your choice, I chose Strawberry Preserves 

Directions
Cut the crusts off each piece of bread, then roll them out flat with a rolling pin. Spread the softened cream cheese on all of one side of each of the flattened piece of bread, then on half of each piece of bread spread your choice of sweet filling on top of the first layer of cream cheese, then roll up that piece of bread, the cream cheese should act like glue and keep it rolled up, do that to the rest of each piece of flattened bread. Once you've rolled up all the bread mix together the milk, eggs, sugar, and cinnamon, in a dish that will be easy for you to roll the french rolls in. Heat up a frying pan on medium low heat and melt the butter, roll the french rolls through the egg mixture and put them in the frying pan cooking each side until golden brown. Allow the rolls to cool for 2-3 minutes and then sprinkle with powdered sugar, or serve with a side of syrup, Or just have them as is. Enjoy!
