Chocolate Pudding Cake
This is a super simple, super quick cake you can make if you have a craving for the molten chocolate lava cake. I've made this the past couple days in a row because its so easy and SO DELICIOUS!! Trust me if you love molten chocolate lava cake, you'll love this chocolate pudding cake, You won't believe how simple and quick it is!
This is another country favorite of mine, I think the first time that I had chocolate pudding cake was at my ma'maw's house around thanksgiving. She always had wonderful goodies around of all the grand kids, and I always took advantage of it because I never had these goodies when I went back home up north. I will always cherish the moments in time that I had with my father, and all the different things we would do together, and all the different things I experienced when I was visiting with him. Since he passed away I have been search for the nostalgic foods that I remember having with him that I can't have here up north because they don't really know about such things. This Cake is one of those beautiful memories for me, and to be able to have it and enjoy it now, well lets just say I call this my comfort food. Maybe in sharing this recipe with you, it will create the same kind of memories with your families. One Can only hope right.
Preheat the oven to 375 degrees and grease an 8 X 8 inch cake pan, if you do not have an 8 x 8 inch you can use one of the smaller circle cake pans.
We will start this recipe by mixing the dry part of the cake batter. Start by combining One cup of Flour, Three tablespoons of unsweetened Cocoa Powder, Two teaspoons of Baking powder, and One teaspoon of salt in a medium sized bowl. Your going to want to mix it up pretty well, until the cocoa powder is evenly dispersed.
Your mixture should look something like this once you have thoroughly mixed everything together. At this point your going to want to set this aside, and in a separate bowl start on your pudding mixture.
For this mixture you will need 1/2 cup of granulated sugar, 1/2 cup of brown sugar, and 1/4 cup of cocoa powder, I mix this part with my hands because of the brown sugar being so packed together it's kind of hard to do with a fork.
Next your going to need to melt two tablespoons of unsalted sweet stick butter, I do this by putting it in the microwave for about 12-15 seconds, You will also need 1/2 cup of milk and one teaspoon of vanilla.
Make a small crater in the center of the dry cake mixture and pour in all the wet ingredients in, mix thoroughly, its going to seem to thick to be a cake batter but don't worry you didn't mess up that's how its suppose to look.
Spread the cake batter as evenly as possible into the greased cake pan, making sure to spread it out all the way to the sides of the pan.
Then evenly pour the pudding mixture over the top of the cake batter, be sure to evenly spread this out as well, making sure that all the cake batter is now covered by the pudding mixture.
Right before you put the mixture in the oven pour one cup of cold water on top of the whole thing, DO NOT MIX you must not mix the water into the pudding mixture, just pour the water on top and immediately put the cake into the oven and bake for 40-45 minutes, or until the top of the cake resembles something that looks like brownies, I usually only have to bake it for 42 minutes, the time varies oven to oven.
Your going to want to let the cake cool for at least 10-15 minutes before cutting into it and gobbling it down, trust me it's pretty hot when it comes out so your going to want to let it cool or your going to burn the heck out of your mouth.
I serve it with homemade whipped cream that I like to freeze and use like a kind of whipped cream ice cream. Either way its good with out without the stuff, I will post the whipped cream recipe some time this week. Until then Enjoy the chocolate pudding cake as is, or if you have vanilla ice cream it would be a good sub for the whipped cream.

Chocolate Pudding Cake:
*Cake ingredients-
1 c. Flour
3/4 c. Granulated Sugar
3 tbsp. Cocoa Powder
2 tsp. Baking Powder
1 tsp. Salt
1/2 c. Milk
2 tbsp. Butter - Melted
1 tsp. Vanilla
*Pudding Ingredients-
1/2 c. Granulated Sugar
1/2 c. Brown Sugar
1/4 c. Cocoa Powder
1 c. Cold water
Directions: Preheat oven to 375 degrees, and grease/non-stick cooking spray an 8 x 8 inch cake pan. In a medium sized bowl combined the flour, cocoa powder, baking powder, granulated sugar and salt until well combined. In the center of this mixture create a crater and pour in the milk, melted butter, and vanilla. Mix until thick batter is formed, pour this batter into the grease cake pan and spread it as evenly as possible. Then combine 1/2 cup of granulated sugar, 1/2 cup of brown sugar and 1/4 cup of cocoa powder in a separate bowl and then evenly spread that mixture over the top of the cake batter mixture and pour 1 cup of cold water over the top of all of it, then immediately put the cake into the oven and bake for 40-45 minutes. Allow the cake to cool for 10-15 minutes, once it comes out of the oven. Serve warm with whipped cream or vanilla ice cream.
