Banana Muffins! So delicious!


Banana Muffins

I love banana muffins, and I love them from scratch! nice and warm out of the oven is the best way. Its also a great on the go breakfast, you can really put anything you want into these banana muffins, you can add nuts,, you can bring down the sugar, you can really do whatever you want with these muffins and its great! 



Ever since I can remember banana bread was made and I loved it, and as I got older I wanted to make my own, so I've made and tweaked, and found the recipes that I like. One of the many variations that I very much enjoy is the Banana Muffin, I love it because it's a grab and go kinda food. You can make it super healthy too if you want, you can sub a bunch of the ingredients that I am going to be using for all the healthy stuff. This Post though is just going to be the basic recipe.


I do things the old school way, by hand, I don't use a mixer or anything I just use my hands and a fork. You want to mash three bananas (that are super ripe) then add about a teaspoon or more of vanilla in with the mash. Melt 1/3 cup of butter, and add the 3/4 cup of sugar to the mashed banana, mix in the egg and then slowly add the melted butter.


In a separate bowl mix together all the dry ingredients, such as one teaspoon baking soda and a teaspoon of baking powder. 1 1/2 cup of flour and a teaspoon of salt. Mix that all together really well then create a crater in the center and add the wet mixture to the dry. Now this is important, you only want to stir this just until all of it is well combined (this is why I choose not to use a mixer) If you mix it too much you loose the nice sort of denseness that you find in most muffins, it gets to airy if you mix it to long in a mixer.


Once you get it all mixed together, its going to look like a really thick batter, close to a dough but still really too wet. At this point if you have an ice cream scooper that you like to use in filling the cup cake pan then by all means. I just used the spoon you see there in the picture.


You want to really fill them up almost all the way, they will rise a little bit but they wont go crazy over board so you don't have to worry about it going over the sides, if you had enough of the batter you could fill it all the way up and it would not spill over. Now you want to get this pan into an oven that has been preheat to 375 degrees and you want to let them cook for about 15-20 minutes or until when tested by tooth pick comes out clean.


You want to then move them to a cooling rack and allow them to fully cool for at least 5 minutes, you can add frosting if you'd like, I like to eat them as is or with a little bit of butter.

Ingredients:

3 Large Very Ripe Bananas
1 1/2 cup Flour
1 egg
1 teaspoon Vanilla
1/3 cup melted butter
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt

Directions:

Preheat the oven to 375 degrees
Mash the bananas with a fork, then add in the sugar egg and vanilla. Melt butter and then slowly add to the mash. 
In a separate bowl mix together the flour baking soda baking powder and salt once combined create a crater in the center. Add the wet ingredients to the dry and mix just until well combined. In a prepared cupcake pan using an ice cream scoop, scoop in batter into little cupcake liners until about 3/4 full. Place the cupcake pan into the oven and cook for 15-20 minutes or until golden brown or until tooth pick when inserted comes out clean. Place on a cooling rack for at least 5 minutes, then ENJOY!!
